Ingredients
- 1 cup of dried lentils
- 5 cups of low-sodium beef stock
- Ham bones
- 2 potatoes
- 2 tablespoons of I Can't Believe It's Not Butter®
- 1 tablespoon of flour
- Pepper
- Dill
Directions
- Wash lentils and drain
- Cover with cold water and allow to stand for at least 2 hours.
- Strain
- Place in large saucepan with low-sodium beef stock and ham bones
- Cover and bring to boil
- Reduce heat and simmer for 30 minutes or until lentils are tender
- Add potatoes and simmer for at least 20 minutes
- Cream together the I Can't Believe It's Not Butter® and flour
- Gradually mix into soup
- Cook for 15 minutes
