Carrot Cake & Cream Cheese Frosting – Employee Favorite

Ingredients:

  • 2 cups flour
  • 2 teaspoons baking soda
  • 1 teaspoon baking powder
  • 1 teaspoon salt
  • 2 teaspoons cinnamon
  • 1¾ cups sugar
  • 1 cup vegetable oil
  • 3 eggs
  • 1 teaspoon vanilla
  • 2 cups shredded carrots
  • 1 cup shredded coconut
  • 8oz can crushed pineapple

 

Process:

  1. Grease and flour 13x9 pan
  2. Preheat oven at 350
  3. Mix first 5 ingredients (dry), and make a well in the center of the pan
  4. Add sugar, oil, eggs and vanilla to dry mixture, and mix well
  5. Stir in carrots, nuts, pineapple and coconut. Mix well
  6. Pour into pan and back for 45 minutes.
  7. Test with a toothpick to see if ready
  8. Cool and frost cake
